Fresh Eggs or Not?
Curious about the freshness of your eggs? Simple test: gently place them in a big bowl of water. If they lay flat, they are very fresh (use these for meringues and souffles). If they touch the bottom but are bouyant, they are less fresh but still very edible. If they totally float, throw them away!!! - Lula www.lulasforlunch.com


If they touch the bottom but are bouyant, they will peel perfectly for deviled eggs or garnishes such as for chef salads or potato salad!

So true! The ones that lay flat will do so as well.
